October is Planting Time for Winter Vegetables in Cochise County (Reprinted from Herald/Review)

In October plant beets, broccoli, cabbage, carrots, cauliflower, celery, kale, kohlrabi, turnips, spinach and swiss chard. They will grow slower during the winter months but they are cold hardy and the growth of these veggies will pick up as the soil warms in the spring.
Winter vegetables grow more aggressively in full sun, meaning at least six hours of direct sunlight, however, they can tolerate some light shade.
In general, seeds should be planted at a depth of two times the width, or diameter, of the seed. Plant beet and swiss chard seed ½ to 1” deep and at least a couple of inches apart so they can fill out. For tiny seeds like carrots, place them on the surface of the soil and barely cover them with soil. Broccoli, cabbage and cauliflower about ¼ to ½ inch deep.
Remember to allow space for the plants at maturity. Try to space out the carrots and beets. If you plant them too thick, thin them out with scissors after they germinate and use the beet thinnings in a salad.
You can pre-soak the seeds of beets, turnips and swiss chard for 24 hours to soften the outer shell and increase the germination rates. The seeds of the other vegetables are too small and will germinate without pre-soaking.
After planting and giving the seeds their first irrigation, cover the planted seeds with clear plastic and weight down the edges and you have created a mini green house. The sun will heat up the soil and the seeds with germinate more quickly.
Re-plant about once a month for a continual harvest after the plants have picked up momentum. Remember; sequential planting, sequential harvesting.
These winter vegetables are high in vitamins and minerals. Salad greens such as kale, beet and turnip greens are excellent sources of fiber, antioxidants, manganese, copper, and potassium. They are also a rich source of iron, calcium, and Vitamins: A, B1, B2, C, K and Niacin.
Use the salad greens as they become large enough to eat. They will keep replenishing themselves.
You do not need a set-a-side garden. Plant your vegetables in among your existing plants, shrubs and planter boxes. The irrigation system is already installed and the winter veggies add different leaf textures and color during the winter months.
