More Vitamin C than an Orange? – –
Did you know that there is a vegetable with more vitamin C than and orange? Believe it or not, there is. It’s called a kohlrabi, which in German loosely translates into ‘cabbage turnip’. Kohlrabi is popular in Germany and other Eastern European countries because of its unique taste and incredible nutritional benefits.
Fun Nutritional Facts about Kohlrabi
An ounce of this super veggie contains nearly 140% of the vitamin C recommended for daily consumption. But that’s not all the goodness a kohlrabi has for you to enjoy. This vegetable also is high in fiber and contains a decent amount of potassium, calcium, magnesium, and phosphorus along with some B vitamins (B1 & B6) and trace amounts of the minerals copper and manganese.
Eating Kohlrabi
In our house, kohlrabi is most often eaten raw after peeling off its tough skin. It can also be eaten cooked, mashed, or cut up raw in salads. And don’t throw away kohlrabi greens. You can also use them in salads or in your green smoothies. Kohlrabi can be store for several weeks, but once you’ve cut it up, don’t let it sit overnight, because it often develops a bitter taste. It’s still edible, but its sweet yummieness definitely fades.
For those adventurous smoothie connoisseurs, here is a suggested recipe. (Modify according to your own tastes)
1 bunch of greens, kohlrabi, kale, or spinach
1 apple
1 banana masks the strong vegetable flavor of the greens)
½ avocado (for creaminess without dairy)
1 carrot
1/2 cup fruit juice or water
½ red beet (if you want to go for fluorescent red instead)
Growing and Buying Kohlrabi
For those of you thinking about growing kohlrabi yourselves, make sure you plant it in late fall or very early spring, because kohlrabi doesn’t like the heat. The hotter the weather gets the more spicy bite (think radish) it gets. You typically don’t find kohlrabi at your local super market, but the Sierra Vista Farmers Markets has several vendors that pick kohlrabi fresh just for you. This super veggie is seasonal so if you want to try it, make sure you stop by the market before they are gone.
